"When in Rome..."

This tasty party favourite is excellent for taunting prisoners from Gaul
Soak 5 plump dates in wine; remove the stones, mash the dates, and set aside
Put 2 pints of sweet red wine and 15 pounds of honey in a metal vessel
Heat over a slow fire, stirring all the while with a wooden spoon
When it begins to boil, add enough cold wine to stop the boiling
Remove from fire (the mixture will sink). Allow to cool
Repeat the boiling process two more times, then cover and set aside overnight
The following day, skim the mixture
Add 4 ounces pepper, 3 pinches pounded mastic, a handful of saffron, and the mashed dates
Add mixture to 18 pints sweet wine. Stir.
Add honey to sweeten, if desired. Serve from fountain.
